There's a few vegetarian restaurants in Manchester, plus places that search vegetarian food. During the day there's Eighth Day and Earth Cafe, whilst for the evening there's Bistro 1847 and the Greenhouse (Rusholme), plus places further out such as Greens (Didsbury) and the Globe pub (Glossop).
I don't have personal experience of the last two. There are also plenty of places with veggie or vegan options, plus Halal restaurants which may suit kosher meat eaters.
I don't actually spend that much time in the scene outside of Biphoria, although I've been going to the Molly House a bit more recently as it tends to have lovely beer and interesting people (the rest of Canal St can be nice, but a lot is a bit lager and/or clubbing oriented).
Travel time wouldn't actually be that different - about half an hour's difference to London, and if you're going by train somehow the time to reach Cambridge is the same (in the car, you'll save up to 50 minutes from Stoke though..).
Some parts of Manchester I love, others I'm not so fussed about, but then again I see myself as quite a sociable country boy rather than a city inhabitant..
